Why “Zephyr”?

In Greek mythology, Zephyr is the personification of the West Wind—the gentlest and most favorable of the four winds.

Zephyr is famously depicted in Sandro Botticelli’s The Birth of Venus, where the winged god of the West Wind appears on the far left, blowing Venus ashore on her iconic shell.

For an oyster farmer on the East Coast, the west wind carries a meaning all its own. A west wind often means a good day on the water—calmer conditions, favorable tides, and the promise of a day well spent growing and harvesting oysters.

The name is also a nod to something we love beyond the water: art, history, and the enduring relationship between people and the natural world. And, of course, there’s something fitting about an oyster bearing the name of a wind that helped carry Venus to shore on a giant shell.

The Zephyr is our nod to favorable winds, good water, and the timeless connection between the sea, the people who work it, and the things it brings to shore.

Born in the protected waterways of Cape May, New Jersey, and finished by the pristine tidal waters of the Delaware Bay, the Zephyr is a true Jersey-grown oyster.

The Zephyr is sometimes called an “entry oyster”—not because it lacks character, but because its well-rounded flavor and approachable profile make it a favorite for both seasoned oyster lovers and those trying oysters for the first time.

Small to medium in size, with high salinity, a clean, plump bite, and a sweet finish, the Zephyr strikes a balance that keeps you coming back for another.

Grown with care, shaped by two distinct bodies of water, and finished by the tides of the Delaware Bay, the Zephyr is our signature expression of a Jersey oyster.
